Holiday Treat Roundup


It's no secret that I have a heck of a sweet tooth. What better excuse than the holidays to whip up bunches of sweet treats to share with everyone you know? Below you will find some of my all time favorite recipes for making up cookie plates for the holiday season!.


I replaced half the chocolate chips in these cookies with red and green M&M's for a more festive look.



If chocolate and peanut butter are your style, whip up these quick bars that my sister and I lovingly dubbed "Sugar Shock" bars, due to their super sweet richness!



You can't go wrong with these soft double ginger cookies!




We begged my mom every year to make Mounds Bars for the Christmas cookie tray. Add some colorful sprinkles for an extra fancy touch!



Almost nothing is easier than a batch of these Dark Chocolate Peppermint Truffles. Put them on the cookie tray or give them as gifts!

Vanilla Sugar

I've been working on tons of projects lately, and feel like I may have bitten off a little more than I can chew. I'm going to use the upcoming Thanksgiving holiday to play a little catch up (as well as do lots of cooking and eating). Here is a recipe for vanilla sugar you can make ahead and use in some of your holiday baking, or give as gifts!

To make your own vanilla sugar at home you will need:

granulated sugar
vanilla beans




I ordered my vanilla beans online from Beanilla. I would recommend them (especially if you want to make up a ton of this for gifts). They have great bulk prices and my beans arrived super fast (the shipping was also free!).


Cut open your vanilla beans lenthwise and scrape out all of the caviar (all the little bits inside the bean) with a small spoon. Add the caviar and the vanilla pods to your sugar and mix together very well. I generally use one vanilla bean for every 1-1.5 cups of sugar. Put your sugar and vanilla bean mixture into an air tight container and store in a cool, dry place (preferably out of direct light as well). Allow 2 weeks for the vanilla to properly flavor your sugar.


Add this to any recipe calling for sugar that you'd like to add a little extra vanilla flavor to. You may add more sugar and vanilla beans as necessary (if you use a vanilla bean in something else, put the pod into your sugar--add more sugar as space allows and stir well).




If vanilla sugar isn't your thing, you can try your hand at making your own vanilla extract instead!

Mocha Roasted Almonds


It's rainy and chilly here today in Portland and I'm loving it! I decided a yummy smelling snack needed to be made in my oven today and these Mocha flavored Roasted Almonds fit the bill! They only take a few ingredients and about 40 minutes of your time (they also make a great Holiday gift. You know, if you're thinking about that already.).

To make you own Mocha Roasted Almonds you will need:

2 1/2 cups Raw Almonds
1/2 cup granulated sugar
2 Tablespoons Unsweetened Cocoa powder
1 1/2 teaspoons instant espresso powder
1 egg white

Preheat your oven to 325 (F). In a small bowl (3 cups or more by volume) beat your egg white until it is just frothy and beginning to lighten. Add in your almonds and mix them around until evenly coated with egg white.

In a zip sealed bag, mix together your sugar, cocoa and espresso powder. Shake until evenly combined. Add in your egg white coated almonds and shake to coat. Pour onto a sheet pan lined with parchment or a silpat mat.

Bake in oven for 30 minutes at 325 degrees, stirring every 10 minutes or so (this will clump together a bit if not stirred often- you can break it apart after it has cooled if necessary). Make sure you line your pan, as the mixture will stick to the pan if you do not (melting sugar just does that, you know).


Remove from oven and allow to cool completely before packaging. Eat these as a snack on their own, or put them on ice cream, cupcakes, etc. as a delicious topping!

If giving this as gifts, an easy way to package this is to put it into clear bags and stick that into one of these little boxes as shown below. You can find them at most craft and hobby stores (paper mache boxes would also work well.). Just tie it with a piece of colored ribbon and you have an easy yet cute treat box that is reusable!

Edible Glitter


With lots of holidays coming up, I decided maybe I would try out making some edible glitter. This would work well for decorating cupcakes or cookies, rimming cocktail glasses, or even use some as face or body glitter on Halloween (it will sure wash off easier than regular glitter!).

To make your own edible glitter at home you will need:

1/4 cup granulated sugar
1/2 teaspoon fluid food coloring of your choice
baking sheet
parchment paper(optional but recommended)




Start by preheating your oven to 350 degrees and measuring out your sugar and adding in your food coloring. You can use more or less food coloring than this recipe calls for depending on how vibrant and deep you want your colors to be. I chose yellow food coloring, but added enough that my final product really looks more golden orange. I highly recommend liquid food coloring for this as it mixes in much easier and gives a nice even coating without too much stirring and mess. It also doesn't have all the additives that many gel or powdered coloring do. Mix your sugar and coloring together well.


Once you have mixed your sugar and food coloring together, dump it onto a baking sheet lined with parchment paper. The parchment paper helps keep your sugar from sticking to the baking sheet and will be really helpful when it comes time to put the final glitter into a container (just lift, fold and pour!).


Spread out the sugar as evenly as you can before baking. As you can see in the photo above, it is pretty clumpy and not that easy to spread out, just do the best you can.


I put my sugar in the oven for about 1 minute, then opened it up to give the sugar a little stir. If you don't mix this often you will get lots of huge clumps, or some of the sugar can melt together into a puddle of deliciousness (though not glitter, so keep an eye on this). I turned my oven off after about 3 minutes, as there is plenty of residual heat to finish drying out your glitter. My total "bake time" was about 10 minutes, I stirred the sugar around about every minute or so.


Allow your sugar to cool completely before putting it into a container (I used a small mason jar). While my sugar was cooling, I used the back of a spoon to crush it back up into smaller pieces against the baking tray (a poor man's mortar and pestle if you will). This definitely looks a lot more like glitter in smaller crystals, it's so shiny!


Use a small spoon to sprinkle this over cupcakes or frosted cookies for a little extra shimmer. I also recommend using honey or agave nectar around the rim of a glass and dipping to make festive cocktail rims for a party. If you want to use this as glitter face paint, use a clean paintbrush to apply a design to your cheek, etc. with light corn syrup and then sprinkle the edible glitter on top! Technically, this is more like the brightly colored sugar sprinkles you can get at the store. If metallic glitters are more your style try this recipe I found on Pinterest.

Banana Bread



One of my favorite things about Fall and winter is that I can bake up a storm in my kitchen without making my house unbearable to be in. What better way to celebrate this than whip up some super yummy banana bread? This is a super easy recipe and makes a great addition to breakfasts at the holidays or any time of year, and who doesn't appreciate the gift of baked goods?

This recipe yields one large loaf pan of bread, or 2 smaller loaves (I used 2 of the aluminum loaf pans you can buy in 3 packs at the grocery store, they are great for gifting to people because you don't have to worry about asking for them back).

To make this Banana Bread you will need:

1 3/4 cup all purpose flour
1 cup sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/4 teaspoon salt
1/4 teaspoon cinnamon (optional)
1/4 teaspoon nutmeg (optional)
2 overripe bananas, mashed
1/2 cup vegetable oil
1 tsp vanilla
2 Tbsp. milk
2 eggs

I start by pre heating my oven to 350 degrees and mixing all of my wet ingredients together in one bowl, and all my dry ingredients in another bowl. Mixing them both well separately ensures that everything is evenly distributed without over mixing the final batter. For the dry ingredients I often use a whisk for the mixing as I find it does a great job of evenly distributing my dry ingredients quickly, but a spoon will work just fine.

Next, combine the wet and dry ingredients together and mix until everything has come together, try not to overmix, but you don't want dry clumps in your batter either!

Pour the batter into greased bread pans, filled about half way each (you can fill them up to as much as 3/4 full, but this bread does rise a very fair amount when baking). Bake at 350 degrees for 40-45 minutes for 2 loaves, or 60 minutes for one larger loaf. If you prefer to try this as muffins, I would check them after 20 minutes or so.



Set on a rack to cool and serve warm with or without any toppings you choose. The husband and I ate a whole pan in an afternoon, but we're kinda shameful that way ;)

Friday Food Craft: Cheesecake


I know some of you may be running to hide at the mere mention of cheesecake. It is something that I myself always considered too difficult to tackle. When you see recipes on tv and in books it usually involves spring form pans, water baths and more. Let's face it, I'm not always down for the theatrics. This recipe came from my friend Melissa whom got it right off of a cream cheese box years ago. I can't figure out why they stopped printing this recipe on the box, it's amazing. Better still? There are 4 ingredients in the actual cheesecake portion of this cheesecake. Best? It's probably the creamiest, most delicious cheesecake I have ever had!

So how do you make this amazing cheesecake? For starters you will need:

2 8oz. packages of cream cheese, softened
1/2 cup granulated sugar
1/2 teaspoon vanilla extract
2 whole eggs

You also need a graham cracker crust. Here's fantastic Holiday news: feel free to go out and buy one pre-made. If that doesn't suit you, you can use the graham cracker crust recipe listed on my Mounds Bars recipe.

Heat your oven to 325 degrees.

In a large mixing bowl, or stand mixer, beat together cream cheese, sugar and vanilla until well combined. Add in your eggs, one at a time, beating until fully incorporated after each. You should end up with a very smooth creamy "batter".

Pour your batter onto your graham cracker crust and smooth. Bake in 325 degree oven for 40 minutes, until center is ALMOST set (it will continue to bake slightly while cooling, do not worry if it looks a little runny to you, I thought the same but it came out perfect). Place on cooling rack and allow to cool to room temperature. Cover with plastic wrap and refrigerate for at least 3 hours. I refrigerated mine overnight (with visions of cheesecake dancing in my head).




That's it! You will have a perfectly moist and creamy cheesecake with no hassle :)

Serve plain or with fruit topping (you could also get really awesome and make a caramel or chocolate sauce!).

Nutella Cookies with Candy Cane Kisses


Friday once again, and I am back with an experimental recipe that was, admittedly, a little bit of a fail on my part. I meant for these to turn out more like thumbprint cookies, but I lacked margarine or shortening (and my first attempt didn't have enough flour). As a result, my cookies spread a little too much and so my pictures are not that great. The cookies do taste delicious, however, so I had to share anyway. I'm not above admitting my shortcomings. The recipe is, of course, updated, to give you a better shot at more eye pleasing cookies.


To make these tasty morsels you will need:

1/2 cup butter, softened
1/4 cup margarine, softened
3/4 cup brown sugar
1/4 cup granulated sugar
2 eggs, room temperature
1 cup Nutella (chocolate Hazlenut spread)
1 1/2 teaspoons vanilla extract
2 Tablespoons cocoa powder
3 cups flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon kosher salt
Candy Cane Hershey's Kisses (If you don't want to mess with the thumbprint cookie idea, these can certainly be chopped into smaller pieces and mixed right in with the dough!)

In a large mixing bowl, use an electric mixer to cream the butter and margarine (I typically use both butter and margarine because I have found that butter gives a better taste, but margarine typically allows your cookies to become fluffier and not fall flat, alas I was out of margarine). Add the brown sugar and sugar and cream together. Beat in the Nutella, then add the eggs one at a time, mixing until combined. Mix in the vanilla extract.

In a small mixing bowl, sift together the flour, baking soda, cocoa powder, baking powder and salt. Add dry ingredients to the creamed mixture and mix well. Refrigerate dough for at least 30 minutes before scooping cookies.

Preheat oven to 350 degrees. Remove cookie dough from the refrigerator and scoop out tablespoon sized balls of dough. Roll gently in your (clean) hands to make a ball and place onto a parchment lined cookie sheet. Once all of your dough balls are on the cookie sheet, place one Candy Cane Kiss in the center of each one and press down gently. You want the kiss to stick into the cookie without smashing it flat. You will have a tray that looks something like this:



Bake your cookies at 350 degrees for 10-12 minutes. Cool on cookie tray for 5 minutes, then transfer to cooling rack to cool completely. Store in an air tight container.
